Summer is all about celebration. And that includes sweet-centric holidays, like National Ice Cream Sandwich Day. Yup, it’s a real thing. So here are some fun ways to make your own at home to celebrate.

The Easiest Ice Cream Sandwich Ever

The easiest way to create your own at-home ice cream sandwich is by purchasing pre-made cookies and a carton of ice cream from your local grocery store. Go for a classic pairing, like chocolate chip cookies and a scoop of vanilla ice cream. To level this sandwich up even more, roll the edges of the exposed ice cream into brightly colored sprinkles or mini chocolate chip morsels. Or maybe you’re an all-out chocolate lover and want to use chocolate fudge ice cream and sandwich it between a gooey chocolate cookie from your favorite bakery. The Waffle Sandwich

While you can use practically any cookie as your “sandwich” layer, waffles make an awesome substitute. Any store-bought freezer waffle will do if you don’t own a waffle maker (just to toast it and let it cool). But, nothing really beats a freshly made waffle. Just make sure to let it completely cool down before assembling your sandwich.

Chocolate Ice Cream Sandwiches

For a legitimate – and slightly more complicated, but fun, recipe – check out this incredibly delicious chocolate ice cream sandwich tutorial. You’ll bake two large cookies that are rich and soft. Coat one with vanilla ice cream or a boozy ice cream that includes rum or brandy. Then sandwich it together with the second large cookie, freeze, and cut it into 12 individual bars.
