Fajitas are a great weeknight meal. A Tex-Mex classic, they are usually made with strips of spiced chicken or beef, grilled or sauteed with bell peppers and onions and served with flour tortillas for make-your-own soft tacos. You can go all out and make guacamole and beans and rice, or you can just crack open a jar of salsa and call it dinner.
Of course, you still have to have the meat and the peppers and onions and spices. Or do you? How about totally going rogue with whatever is in your fridge or cupboard? It may not be a fajita, but it could still be a great easy dinner.
