Chimichurri is an amazing Argentinian sauce combining the herbal freshness of parsley, cilantro, zesty raw garlic, lime juice, red wine vinegar, red onion, and a pinch of red pepper flakes, as well as olive oil, salt, and black pepper. Variations can include subbing in shallot for the red onion and jalapeno or other green chile instead of red pepper flakes.
Traditionally served atop beef and often with other meats like chicken and pork, chimichurri’s unique charms don’t have to end with those pairing. This spicy, salty, and acidic wonder sauce can do so much more. Check out this guide to some of the many ways you can make your chimichurri work overtime.
Salad Dressing
Chimichurri already has all the makings of a delicious vinaigrette. The only alteration you might want to make is to up the olive oil and vinegar content. Start by mixing up the appropriate ratio and quantity of oil and vinegar you need for the salad you’re building, then simply add a dollop of your chimichurri sauce. Presto!
Sandwich Spread
Make your chimichurri sandwich ready by mixing approximately 1 teaspoon with 1 tablespoon of mayonnaise, adding extra salt as needed. That’s it. This option is also excellent served on fish with a spritz of fresh lemon juice mixed in.
Chimichurri Scramble
Take breakfasts at home to the next level with a bistro-style egg scramble featuring the bright herbal flavors of your own homemade chimichurri. Simply scramble some eggs in a bowl, and then mix in a couple of tablespoons of your chimichurri sauce. A few delicious additions could include red bell pepper, asparagus, and goat cheese. Yum.
Chimichurri Dip
Like the chimichurri sandwich spread, this recipe takes your chimichurri sauce and adds a helping of mayonnaise. But this one also adds sour cream. That’s what makes it different! This recipe from The Spruce Eats also mixes in an avocado, for an extra layer of creamy, fatty goodness.
